Calcareous Wines:
The land Calcareous sits on is just 12 miles from the Pacific Ocean and enjoys the full benefits of Paso Robles’ unique westside climate. Richly calcareous soils, the regulating maritime influence of both the Templeton Gap and Salinas Valley fogs and steep hillside topography create a spectacular climate for growing wine grapes. Long, warm days during the growing season, followed by the cool nights, result in a massive diurnal temperature swing that is of utmost importance to producing perfectly balanced wines. The result is wines of uncommon character and unparalleled beauty.

Cabernet Sauvignon: Deeply extracted ruby red in color, this Cabernet exudes plum, ripe raspberry, and a hint of briny black olive. Pronounced early soft tannins frame the dark fruit character that builds in complexity and weight towards the finish. A blend of French and American oak helps create a subtly lingering finish showing more nuance and grace than is expected of New World Cabernet.
The Messer: Dark purple hues are matched by an immensely perfumed nose. Dried ripe cranberry and currants pair with Italian spice notes to produce an enticing upfront palate. Rich full tannins create a beautiful weight in the mid-palate that builds to a full yet succinct finish. This wine will age and develop character over the next 10-14 years. Wines of this magnitude require size and richness in their pairings and I would reach to the grill and serve with a classic west coast burger topped with bacon, avocado and smoked gouda on a brioche bun.
Moose: Appears deep violet in color while ripe blueberry fruit, cedar fills the nose. The upfront richness and powerful black cherry and cacao is balanced by mid-palate acidity all combining blackberry jam and sage with textbook meaty West Paso Robles Syrah. A perfectly balanced finish allows this robust wine to pair beautifully with braised short ribs, pulled pork BBQ, or grilled lamb chops.
Adelaida Wines:
Adelaida’s seven meticulous vineyards are characterized by chalk-rock limestone soils and afternoon blasts of cool coastal air. These unique and varied locations led to specifically designated grape varietals. By taking advantage of the unique soil, elevation, and microclimates on the property.
Pinot Noir: A succulent wine with aromas of rosehips, cherry, and boysenberry jam. The flavor continues with notes of smokey mushrooms, dark chocolate, and blackberry. It drinking beautifully now and will develop with age through 2028.
Zinfandel: Deep ruby and violet color with aromas of black cherry, raspberry, vanilla, and cinnamon on the nose. Mixed berry compote, cloves, and black plum on the palate. A classic example of Zinfandel. Enjoy now up to 2024.
Cabernet Sauvignon: The wine’s ruby gemstone color with aromas of soft red berries and notes of allspice, vanilla bean and sweet mocha. Moderate tannins and the persistence of ripe berry flavors extend through the long finish. Enjoy now through 2025.
Anna’s Red Blend: More complex than a single varietal, with its refined perfume of raspberry and plum. In the mouth, the savory, silken texture of Grenache flows across the palette of this engaging blend. A wine to watch the sunset and contemplate. Drink now through 2025.
Carignan: This unique varietal has a bouquet that opens with a crisp note of dried cranberry fruit and raspberry tea, followed by spicy notes of cinnamon and star anise. The palate shows bright balanced acidity, notes of fresh cranberry sauce, pomegranate, and rosebud, and finishes long with rich flavors of savory mushroom and smoked Parmesan cheese. Enjoy now through 2023.
Ana's White Blend: Showcasing the different qualities of its four grape varietals, this wine has a complex bouquet of ripe green apple, wet stone, damp earth, and fresh-roasted almonds. The palate is crisp and bright, with notes of lemon verbena, and finishes with fig and ginger spice.
