"I could eat the Las Vegas spicy fare every day of my life, from tamales to the incomparable chile relleno," wrote Baldridge to a friend in New York. Donor Fred Kline says "I know for a fact that Baldridge and his wife loved to come to Las Vegas in the 1950s onward, when they were based in Santa Fe, because he thought the native New Mexican food in Vegas was the most authentic and delicious in the state.
