About Chef Nicholas Elmi: Nicholas Elmi is the chef/owner of Laurel, In the Valley, and Royal Boucherie. For his award winning flagship Restaurant Laurel, Chef Elmi earned four bells (the highest possible) from award winning critic Craig Laban of the Philadelphia Inquirer, and was twice nominated as Best Chef Mid-Atlantic by the James Beard Foundation. Royal Boucherie, an upscale addition to historic Old City is host to several awards including three bells from Craig Laban and Philly’s Best charcuterie from Philadelphia Magazine. Chef Elmi is a graduate of Culinary Institute of America and a native of West Newbury Massachusetts. He has worked in some of the top restaurants on the east coast (Le Bec Fin, Union Pacific, Oceana) and the world (Guy Savoy, Paris). Chef Elmi is the winner of Season 11 of Bravo’s Top Chef Series.
